American Paddlefish – Our American Paddlefish caviar also known as “American Sevruga” , “Spoonbil” or “Chataluga” is uniquely processed in the traditional Russian manner. The source of this variety is the Paddlefish which is found in the Mississippi and Missouri rivers. The roe varies in color from pale to dark-steely gray, has a firm texture and a silky flavor. The eggs are comparable in size and color to those of Caspian Sevruga caviar.
